    1 cup reduced sodium chicken broth or water, divided
    3 onions, chopped
    2 celery stalks, chopped
    1/2 cup chopped carrots
    4 cloves garlic, minced
    1 lb lean ground turkey
    1 28oz can diced tomatoes, with liquid
    1 19oz can black or kidney beans, drained and rinsed
    2 Tbsp chili powder
    1 Tbsp chipotle powder
    1 tsp ground cumin
    1 tsp ground oregano
    1/2 cup frozen corn niblets
    5 Tbsp fat free sour cream
    2 green onions, sliced


Preheat oven to 350F.

Over medium heat, warm 1/2 a cup of chicken broth or water in a large, oven-safe pot. Add onions, celery, carrots, and garlic, stirring until softened and fragrant. Add ground turkey, stirring to break up chunks.

Once turkey is cooked through, add diced tomatoes with liquid, beans without liquid, remaining chicken broth or water, and spices. Bring to boil.

Place pot in oven and bake, covered, for about an hour. Stir in corn niblets and return to oven for another 1/2 hour, this time uncovered.

Serve in bowls with a dollop of sour cream and a sprinkling of green onions. Great with crusty bread and/or salad on the side. Also excellent topped with a shredded cheese like smoked cheddar or montery jack, though of course you're adding to the calorie count.

Leftovers taste even better the next day.

Note: If you like mild flavours, reduce the amount of chili powder. You can also omit the chipotle if you prefer. Alternatively, you can rachet it up a notch by adding minced jalapenos or other peppers in with the vegetables.
