Introduction

Enough of a variation on my Turkey Bean Chili that I need to enter it separately.
This one goes really well with tortilla chips.

Number of Servings: 16

Ingredients

    1 1/4 lb. ground turkey, lean
    1 can stewed tomatoes (1 3/4 c.)
    2 can organic tomato paste (1 1/2 c.)
    2 c. chunky salsa
    1/2 onion, diced
    3 c. water
    4 c. (dry) red beans, soaked, drained, rinsed
    1 tsp. cumin
    1 tsp. paprika
    1 Tbsp. chili powder

Directions

Soak, drain, and rinse the beans. Take about half of them and puree them in the blender with the stewed tomatoes, and a cup of water. Place beans and bean/tomato mixture in a large pot or slow cooker. Add salsa, onion, tomato paste, water and spices.
Brown the turkey and add to the mix. Simmer for 90 minutes, stiring regularly to keep it from sticking to the bottom or turn the slow cooker to low for 2 hours.
Makes about 16 1-cup servings

    This is a REALLY GREAT Recipe! BTW, while I may be her husband, I get no points for praising her here. It's my honest opinion!

    Try it at a mid-season Football party with Santita's White Torilla chips.

    While it's still an indulgence, compared to Canned Chili, this is much healthier.

    Thanks! Haven't made this one in a while - it's just the 11 year old and I at home most days - but, now that she has discovered chili and done that thing pre-teens do where the bottom drops out of their stomachs, I may have to revisit!
