    3 eggs (or a 1/2 cup of egg whites, or 3/4 cup liquid egg substitute)
    1 10 ounce package frozen spinach, thawed
    1/2 cup chopped onion
    1/2 cup chopped green pepper
    3/4 low fat mozzarella cheese, shredded
    1 dash tabasco sauce (optional)


Preheat oven to 350 degrees.

Spray mini cupcake pan with cooking spray.

Beat together spinach, eggs, cheese, onion, green pepper, tabasco and salt.

Pour mixture into pan.

Bake 20 minutes.

Makes 12 individual quiche cups.

    My family enjoyed this dinner (and that says a lot coming from my 3-year old who hates everything!). Surprised that it was so good. I did not use tabasco and I did add a little ham lunch meat. I used fresh spinach that I cooked myself. - 4/15/08

    I added an egg and put in 1/4 cup Mozzarella and 1/4 cup Mexican Shredded cheese. Very Yummy. I think a little more cheese and a little less spinach, it would be perfect. - 3/11/08

    I made this with an extra egg to bind everything together, and a little ham we had lying around. I love recipes like this that you can throw together by feel.

    I LOVE THIS RECIPE. I eat these everyday they're that good. Sometikmes I use brocolli....sometimes i use ham. Sometimes I put cilantro in them....i play with it and always they turn out delicious!
