    14 g butter
    1 medium onion, finely chopped
    1 clove garlic, crushed
    250 g boneless, skinless chicken breasts, sliced
    6 (260 g) eggs
    130 g corn kernels, drained
    1-1/4 tbsp parsley, finely chopped


Preheat oven to 190°C. Heat margarine over a moderate heat in a heavy based pan. Cook onion and garlic until soft. Add the chicken and cook, stirring, until chicken is cooked through. Place the chicken mixture into a greased 20 cm pie plate. Beat the eggs lightly with the corn and parsley. Pour over chicken. Bake for 15 minutes, or until set. Serve with a green salad or steamed green vegetables.
