    8 oz whole wheat spaghetti
    1 lb large shrimp
    4 tablespoon olive oil
    2 cloves of garlic - minced
    crushed red pepper to taste
    8 oz sugar snap peas
    1/3 cup chicken broth
    3 tablespoons Challenge Butter made with Canola oil
    Red or Yellow Pepper - med. chopped
    3-4 tablespoons fresh parsley - chopped
    1 tablespoon lemon juice


1. Cook spaghetti according to package directions.
2. Add oil to skillet and heat over medium heat. Add garlic and chopped peppers. Cook for about 5 minutes or until pepper is tender.
3. Add shrimp and Crushed Red Peppers and cook until until shrimp no longer pink. Remove shrimp from pan with slotted spoon.
4. Add sugar peas and cook until peas are tender crisp, about 5 minutes.
5. Add broth and stir in butter.
6. Add shrimp, cooked pasta, parsley and lemon juice. Toss until heated through.

Serving size: 1 and 1/2 cup pasta and peas with 4-5 shrimp, depending on size of shrimp per pound.
