Ingredients

    1 can petite diced tomatoes
    1 can black beans
    1 med onion
    2 tsp minced garlic
    2 tbsp oil
    1 cup rice (uncooked)
    6 oz roasted red pepper
    1/8 tsp chipotle chili
    1 tsp cumin
    1 tsp chili powder

Directions

Saute garlic in oil, add red peppers and onion, saute until onion soft. Add cumin, chili powder and chipotle, stir until fragrant, add tomato and beans, cook until warm, add rice cooked in a rice cooker seperately.
