    4 slices whole wheat bread
    1.5 tbsp olive oil
    1/2 c. chopped onion
    2 c. frozen spinach
    1.5 tsp dried dill weed
    1/8 tsp. black pepper
    1/2 c. crumbled feta cheese (low fat)
    1 c. fat free ricotta cheese
    1/2 c. shredded fat-free mozzarella cheese
    1 c. liquid egg substitute


Spray a 9-inch square baking pan with non stick spray. Arrange bread slices in the bottom. Set aside. Preheat oven to 375 degrees.
Cook onion in oil over medium heat in nonstick skillet. Stir in spinach. Cover, reduce heat and cook gently for 4-5 minutes, stirring occasionally and breaking up any large lumps of spinach, if necessary.
Meanwhile, stir together seasonings, cheeses and egg substitute.
Remove the pan from the burner. Stir spinach mixture into the cheese mixture. Cover the bread slices with the mixture.
Bake for 30-35 minutes.
Makes 6 servings.
