    3 Large Eggs - beaten well
    1 Tbs. water
    1 pk (10 oz) Frozen Spinach, thawed with liquid squeezed out
    2 Roma Tomatoes - chopped
    1/4 c diced onion
    1 clove garlic minced fine
    2 Tbs. fresh grated Parmesan cheese


Spray large non-stick pan with non-stick cooking spray. Heat on medium. Mix eggs and water thoroughly. Pour into pan and cover. Cook on medium to medium low until eggs are just set. Meanwhile, saute onion and garlic in small pan with non-stick spray. When soft, add spinach to heat. When eggs are set, spread spinach mixture on half of the eggs. Add chopped tomatoes and cheese. Fold over half and cook until hot throughout. Serves 2
