    1 cup oatmeal
    1/2 tsp. baking soda
    dash salt
    3 T Splenda
    4 egg whites
    1 cup 2% cottage cheese
    1/3 cup unsweetened chocolate almond milk
    1.25 scoops protein powder (I used Permalean Vanilla)


Whiz the oatmeal in a food processor for a few seconds until it forms a coarse powder.

Combine oatmeal, Splenda, baking soda, salt, and protein powder in a bowl. In a separate bowl, combine egg whites, cottage cheese, and milk. Add the egg mixture to the dry mix and stir to combine.

Pour 1/3 c of the batter into a hot skillet sprayed with cooking spray. Cook1-2 minutes, then flip and cook the other side for a minute or so. I suggest using cooking spray between each pancake.

Makes six pancakes.

*You can omit the Splenda if you like SF maple syrup; I don't, so I add it and put about 2 tsp peanut butter on it.
