Introduction

This is sort of a "kitchen sink" sort of soup. I used what I had on hand. This is sort of a "kitchen sink" sort of soup. I used what I had on hand.

Ingredients

    1/2c Broccoli, diced
    1/2c Cauliflower, diced
    1/2c Carrots, diced
    1/2c Baby Lima beans
    1/4c Peas
    1/2c Green Beans
    1/4c Cabbage, shredded
    1/4c Poblano pepper, chopped
    1/4c White Onion, diced
    1/4c Celery, diced
    1TBSP Ginger root, grated
    1TBSP Garlic, minced
    3oz Grilled chicken breast, diced into small pieces
    1 Red Potato, diced
    1TBSP, and 1 Tsp Tomato paste
    3 cans FAT FREE, Lower Sodium Chicken Broth
    1Tsp Olive Oil
    Seasoning to taste

Directions

Saute onions, garlic, celery, poblano pepper, carrots and ginger in olive oil for a few minutes, until onions are translucent. On the side, mix tomato paste with one can of broth and add to pot. Season to taste. I used red pepper flakes, black pepper, garlic powder, and sea salt. Add all other veggies,chicken other two cans of broth and simmer over medium heat for about 30 minutes.
