    1/2 tbsp canola oil
    1/2 onion, chopped
    1 1/2 cups of sliced fresh mushrooms
    1 tsp minced garlic
    150 grams of cooked chicken breast, diced
    1/2 tsp ground cumin
    1/2 tsp chili powder
    1/2 tsp dried oregano
    1 cup fresh baby spinach, coarsley cho[[ed
    1/4 tsp ground black pepper
    2 large, whole wheat tortillas
    40 grams, low fat cheddar cheese, grated


Heat oil in a pan. Add onions and mushrooms and cook. Add garlic. Add chicken and spices. Stir in the spinach. Cook until it has wilted.
In a non-stick skillet, place one of the tortillas. Spread the chicken mixture over the tortilla, and sprinkle with the cheese. Top with other tortilla. Turn once and cook until cheese has melted.
Slide onto a plate and cut into 4 wedges.
OPTIONAL: Serve with salsa and sour cream
