    1/4 onion, finely sliced

    3 garlic cloves, smashed

    4 cardamom seeds , whole

    1 bay leaf, whole

    1 cinnamon stick, whole

    4 peppercorns, whole

    1 chile pepper, whole

    2 cloves, whole

    1 teaspoon cumin seeds

    2 tablespoons ghee or butter

    1/2 teaspoon salt

    2 cups jazmine rice

    3 cups water or broth


Wash and drain rice.
Heat ghee or butter in pot over medium high heat.
Add onion, garlic, cardamom, bay leaf, cumin, chile, cloves, peppercorns, and cinnamon stick. Let cook until fragrant 2 or 3 minutes, gently stirring.
Stir in rice thoroughly to coat with herb mixture for one minute.
Add salt and water. Let come to boil. Cover. Lower heat to medium low for 25 minutes.
Once cooked, stir to fluff up.
