Ingredients

    Butter, salted, .5 cup
    Granulated Sugar, .25 cup
    Brown Sugar, .75 cup, packed
    Banana, fresh, 1 cup, mashed
    Egg, fresh, 1 large
    Sweet sour dough starter, 1 cup
    Vanilla Extract, 1 tsp
    **Oat Flour 1 cup
    Salt, 1 tsp
    Baking Powder, 1 tsp
    Baking Soda, .5 tsp
    **Flax Seed Meal (ground flax), 3 tbsp

Directions

Cream together the shortening and sugar; add egg and mix until blended Stir in bananas and sourdough starter. Add vanilla or use orange peel. Stir flour and other dry ingredients. Pour into greased muffin tins. Bake at 350 degrees for 20 minutes.
