Great Italian recipe that is amazing and very simple ! Even my kids love it! Great Italian recipe that is amazing and very simple ! Even my kids love it!
Number of Servings: 4


    1 onion chopped
    2 Tbls olive oil
    1Lb chicken cut into bite size pieces
    1/3 chopped fresh parsley
    4 cloves garlic
    2 cups Italian style stewed tomatoes
    2 Tbls Lemon Juice
    8oz whole wheat pasta (I prefer thin spaghetti)


Saute onion in skillet with olive oil, cut up chicken into bite size pieces and add to skillet. Cook for 6-7 min until chicken is no longer pink. While meat cooks in at food processor add parsely, garlic and mix. Then add lemon Juice and tomatoes mixing only long enough to chop tomatoes into smaller pieces. (You can also chop these by hand and add them, the chopper just makes it even easier) Add to cooked chicken and let boil for 3 minutes.
Serve hot over cooked pasta.
