    6-8 Stalks of celery cut into bite size pieces
    Large onion chopped
    3-4 Tbsp olive oil
    2-3 Carrots cut into small chunks
    One head of cabbage coarsely chopped
    1 small zucchini cut into small chunks
    1 ½ cups fresh green beans cut into small pieces
    1 can garbanzo beans/chick peas (drained & rinsed)
    1 can dark red kidney beans(drained & rinsed)
    1 can navy beans (drained & rinsed)
    Two cartons of Pacific organic free range chicken broth
    1 cup Spicy Hot V8 vegetable juice
    2 Tbsp dried basil (fresh if available)
    1 Tbsp Spice Hunters Herbes de Provence
    1 tsp Tony Chachere’s More Spice Seasoning
    Salt and pepper to taste
    Fresh grated Parmesan cheese


In a large stock pot sauté celery & onion in olive oil until transparent
Add all vegetables, beans, broth, V8 and spices. Bring to a boil. Immediately reduce heat and simmer slowly for about two hours until vegetables are very tender and broth is thick and rich.

Serve hot with a sprinkle of fresh parmesan cheese on top.
