    2 Cups Grated Zuchini
    1 Red Capsicum (bell pepper) Chopped
    1/2 Cup sliced Mushrooms
    1/2 Cup lean ham, chopped
    1/2 cup mozzarella cheese (light)
    4 Shallots ( spring onions) chopped
    1/4 Cup chopped parsley
    1/2 Cup Self raising flour
    2 Eggs, Beaten
    1 tbsp Grated Parmesan cheese


Combine zucchini, capsicum, mushrooms, ham, cheese, onion and parsley in a large bowl.
Add flour, eggs and pepper to taste. Blend Well.
Spray oven dish with a little olived oil, spread mixture evenly into this.
Sprinkle evenly with parmesan cheese.
Bake in a moderated oven 180C for 25 -30 minutes, or until firm and golden.

Serve with salad, or vegies.
Serves about 6 portions.
