    1 cup shredded Swiss cheese
    1/4 cup reduced fat parmesan cheese
    6 cups steamed cauliflower
    2 TBSP olive oil
    2 TBSP flour
    1/4 tsp salt
    pinch cayenne
    1 clove garlic minced
    1 1/2 cup skim milk
    3 TBSP fresh parsley


Preheat broiler.

Mix 1/2 cup Swiss and 1/4 cup parmesan.

Put steamed cauliflower florets in a 2 qt baking dish.

Heat olive oil in saucepan over medium heat. Add flour, salt and cayenne; cook whisking, 2 minutes. Whisk in garlic. Slowly add milk and cook, whisking until thickened, about 4 minutes. Add 1/2 cup Swiss and parsley.

Pour over cauliflower and top with the mixed cheeses.

Broil 5 minutes.
