Ingredients

    1 1/2 cup whole wheat flour
    1/2 cup oat bran
    1/4 cup ground flax seed
    1/4 cup wheat germ
    3/8 cup Brown Sugar Splenda
    2 tsp baking powder
    1 tsp baking soda
    1/2 tsp salt
    2 tsp cinnamon
    1 tsp ground nutmeg
    1/2 tsp allspice
    1/2 tsp ginger
    1/8 tsp ground cloves

    1 cup unsweetened applesauce
    1 cup buttermilk (I used skim milk with 1 Tbsp lemon juice)
    3 egg whites
    2 Tbsp oil
    1/2 cup raisins

Directions

1. Before you begin, bring all ingredients to room temperature. Grease a standard sized 12 cup muffin tim. Preheat oven to 375 degrees.
2. Mix dry ingredients in a large bowl. Whisk them together well, breaking up any clumps of brown sugar with your fingers if necessary.
3. In a separate bowl, whisk together applesauce, buttermilk, egg whites and oil.
4. Pour wet ingredients into dry ingredients and stiur together until just combined. Stir in raisins.
5. Immediately spoon batter into muffin tins and then place in a preheated 375 degree oven. (cups will be very full)
6. Bake for 20 - 25 minutes.
