    CRUST (oil-based)

    1-1/3 cup all-purpose flour
    1/2 tsp salt
    1/4 cup canola oil
    1/4 cup skim milk


    3 T butter, divided
    1/2 medium onion
    1/2 green bell pepper
    1 small red tomato
    4 oz crumbled Gorgonzola cheese
    4 large eggs
    1-1/2 c. skim milk
    1 tsp salt substitute
    1/2 tsp black pepper


Combine flour and salt. Pour oil and milk into one measuring cup, but do not stir. Pour directly into flour mixture.

Mix until combined, then form a ball, wrap in plastic wrap, and refrigerate for at least 15 minutes.

Preheat oven to 350 F.

While pie crust dough is cooling, chop onion, bell pepper, and tomato. Melt 2 T butter in skillet over medium-low heat; add onion and bell pepper and cook until soft.

Remove dough from refrigerator. Roll out between sheets of plastic wrap or wax paper and place in 9" pie pan, or simply press directly into pie pan (takes longer).

Mix chopped tomato into onions and pepper and pour vegetables into crust. Sprinkle Gorgonzola cheese on top.

Beat eggs well in a medium bowl. Add milk and stir until combined. Stir in salt substitute and pepper. Pour egg mixture over vegetables and cheese.

Bake in preheated oven for 40 minutes, or until center is firm.
