Number of Servings: 12


    2 cans (15 oz.) Jack Mackerel
    1 cup Egg-substitute
    20 quarter pieces of Wheat Saltine Crackers (crushed)
    8 tsp. of Soluble Fiber supplement
    Creole Seasoning
    non-stick cooking spray


Drain juice from mackerel and set aside. Mix fiber and egg substitute thoroughly. Combine mackeral and egg mixture. Add crushed crackers. If meat mixture is to dry, then add a teaspoon of mackerel juice at a time until the mackerel mixture is moist enough to form patties. Divide mackerel mixture into 12 equal parts (approx. 3 oz.) and form patties with each.
Heat non-stick fry pan on medium heat; then spray with non-stick cooking spray. As you place the patties into the fry pan, sprinkle with Creole Seasoning to taste (like you would salt and pepper). Cook on medium heat until golden brown, then flip and cook until golden brown on other side.
Serve hot.
