    Red Ripe Tomatoes, 2 large whole
    Cucumber (peeled), 1.5 medium
    Red onion 1/4 medium onion, chopped
    Parsley, 1 Tbsp
    Mint, 1 Tbsp
    red wine vinegar, 1 Tbsp
    Olive Oil, 2 tsp
    Mustard, 1 tsp
    Salt, 1/4 tsp
    Pepper, black, 1/4 tsp


Chop Tomatoes, removing stem area. Chop cucumbers as desired (I sliced and then cut slices in half). Chop red onion. Add all three together.

Mix fresh minced parsley, fresh minced mint, vinegar, olive oil, mustard together. Add into tomatoes, cucumbers and onions and toss.

Chill/serve. Makes 6 cups
