Ingredients

    1 small chopped onion
    1/4 cup chopped red bell pepper
    1/4 tsp garlic powder
    2 teaspoons canola oil
    1 cup long-grain rice
    1/2 cup tomato sauce
    1 teaspoon chili powder
    2 cups chicken broth

Directions

Heat oil in a large saucepan over medium heat. Sauté onion, red pepper and garlic until onion is softened. Add rice to pan and cook over medium-high heat until rice has browned. Stir in tomato sauce, chili powder and chicken broth; bring to a boil. Reduce heat to low, cover and simmer for 20 to 25 minutes. Fluff with a fork.
Garnish with chopped green onions (not calculated)
Makes 7 1/2 cup servings
