    1.5 pound extra lean ground meat
    2 large egg whites
    2 oz cornbread stuffing mix (about 1 cup)
    1/2 med onion
    1/2 tsp chili powder
    1/4 tsp ground cumin
    4 oz can green chili peppers
    8 oz can enchilada sauce


preheat oven to 375. In large bowl, mix meat, egg whites, stuffing mix, onion, chili powder, cumin, chiles and 1/2 the enchilada sauce. Shape into loaf. Cook for 1 hour, top with remaining enchilada sauce and bake 5 min more.
