Ingredients


    * 25 / 1oz butter or vegan margarine
    * 1 onion, peeled and chopped
    * 450 g/ 1 lb potatoes, peeled and diced
    * 1 litre/ 1.73 pints vegetable stock or water
    * 2 tablespoons chpped fresh parsley
    * 2 tablespoons chopped fresh chives
    * 2 tbs whipping cream or soya cream (optional)
    * salt
    * freshly ground balck pepper
    * freshly grated nutmeg

Directions

# Melt the butter or margarne in a large saucepan or pressure cooker; don't let it brown.
# Add the onion, give it a stir, then cover the pan and leave it to cook over a low heat, without brwoning, for 5 mins.
# Add the potatoes, still well, cover and cook over a low heat for 5-10 minutes.
# Pour in the stock or water and bring to a boil, then reduce the heat, cover the pan and leave to simmer until the potatoes are tender; this takes about 15 minutes, or 5 minutes in a pressure cooker.
# Pour the soup into a blender or food processor and whiz until smooth.
# Pour soup back into the pan, add the chopped herbs, and the cream if you are using it.
# Season to taste with salt, pepper and nutmeg and reheat gently.
# Serve in warmed bowls.
