Number of Servings: 12


    3 medium ripe bananas, peeled
    1/2 c. canola oil
    2 large eggs
    1/2 c. fat free plain yogurt
    1 tsp. vanilla
    2 c. all-purpose flour
    3/4 c. granulated sugar
    1 1/2 tsp. baking soda
    1/2 tsp. salt
    1 1/4 c. walnuts, choppd


Mash the bananas in a big bowl. Stir in the oil, eggs, yogurt and vanilla. Sift in the flour, sugar, baking soda and salt. Stir until moistened. Add in the nuts, and stir to distribute.

Makes 1 loaf or 12 muffins.

Bake at 350 F for:
60 minutes for the loaf
30 minutes for the muffins.
