Ingredients

    12 large egg whites
    4 large whole eggs
    1/4 C. nonfat milk
    4 C. frozen shredded hashbrowns
    1/2 C. shredded cheese
    1/4 C. bell pepper, diced
    1/2 C. onion, diced
    5 mushrooms, diced
    Salt and pepper or your preferred seasoning, to taste

Directions

Preheat oven to 350 degrees. Mix whole eggs with egg whites with the skim milk. Finely chop veggies and combine with eggs. Add cheese in. Pour Mixture into a prepared with baking spray 9X13 dish. Bake for 20-30 minutes. Serves 4.
