Introduction

Number of Servings: 5

Ingredients

    Prepared brown rice for 4
    1 ham slice
    1 can pineapple chunks - in it's own juice
    2-3 bell peppers
    1 onion
    2 Tbls. corn starch
    2C liquid including:
    strained pineapple juice
    2 tsp. soy sauce
    1/3 C red wine vinegar


Directions

1. Chunk the ham, bell peppers, and onion into bite sized chuncks.
2. Drain the pineapple chunks and save the juice.
3. Combine these 4 ingredients in a medium sauce pan and simmer until the onions are clear.
4. Add the corn starch to the liquids and whisk to blend.
5. Add to the hot ingredients and cook at a low boil, uncovered, until thick.
6. Serve over brown rice.

    I used white rice as I didn’t have any brown. There was none left over. It was wonderful. - 1/13/20
