    1 9-ounce package Lemon Cake Mix (small size)
    1 egg
    4 tablespoons light butter, softened

    4 ounces reduced-fat cream cheese, softened
    1 egg
    1/4 cup sugar

    1 tablespoon lemon juice (or to taste)


1. PREHEAT the oven to 350

2. MIX crust ingredients until moist. The batter will we quite stiff and sticky. Reserve 1 cup of the mixture and press the rest into the bottom of an 8-inch square pan.

3. BAKE crust for 6 minutes. Remove from oven.

4. BLEND the filling ingredients until creamy. Pour/spread over the cooked crust.

5. SPRINKLE or drop by small spoonfuls the remaining 1 cup of crust mixture over the cheese layer. It doesn't have to (and won't) cover the cheese mix evenly.

6. BAKE 23-27 minutes. Remove from oven and cool completely.

7. SPRINKLE the top with powderd sugar. Cut and serve.
