Introduction

I created these to fit in with the Fat Smash Diet Phase 1 and up. They are very good but could be sweeter. For this purpose I left them as I made them, adjust to your taste. Ingredients

    Whole Grain Oat Flour, 1 cup
    Baking Soda, 1/4 tsp
    Baking Powder, 1/4 tsp
    Salt, iodized, 1/4 tsp
    Nonfat Yogurt (Plain or Vanilla), 1/2 cup
    100% Liquid Egg Whites, 1/3 cup (or 3 fresh eggwhites)
    No Calorie Sweetener, 12 tsp (6 Packets)
    Vanilla Extract, 1 tsp
    Orange Extract, 1/2 tsp
    Grated Orange Peel, 1 tbsp
    Orange juice, fresh, 1/4 cup
    100% VIRGIN OLIVE OIL SPRAY, for pans

    Preheat Oven to 350 Degrees. Spray 20 mini muffin cups or one regular size tin of 12.

Directions

Combine oat flour, baking soda, baking powder, and salt. Sift dry mixture twice.

In a medium bowl, combine yogurt, egg whites, sweetener, and extracts, whisk together until mixed well. Add orange peel & orange juice, mix again. Stir in the flour mixture, just until combined.

Spoon batter in prepared pans, bake for 9-11 minutes for mini muffins & about 15 minutes for regular sized muffins.

Makes 20 Mini Muffins or about 12 Regular Sized Muffins.
Serving size is 2 mini muffins or 1 regular sized.

*Nutritional information is based on 2 mini muffins. It is slightly less calories etc. for one regular sized muffin.
