Fresh veggies in eggs and cheese. Yum! Fresh veggies in eggs and cheese. Yum!
Number of Servings: 6


    6 eggs
    2 egg whites
    1/2 cup milk
    1 small red potato
    1 cup spinach, cooked
    1 zuchinni
    1 yellow squash
    2 tbsps olive oil
    1/4 cup monterey jack cheese
    1 tomato
    1 clove garlic
    1/2 mashed potatoes


Saute all veggies except the tomato in oven proof skillet until soft. (Add the spinach in last.) Beat eggs, egg whites and milk together. Spread the veggie mixture evenly over the bottom of the oven proof skillet and pour egg mixture over it. Add cheese by sprinkling over top.

Bake in a 325 degree oven until center is set.

Makes 6 servings.
