Introduction

What I like about this recipe is that it has a lot of vegetables and it looks really great. Cutting the veggies, specially in matchsticks (julienne style) takes a long time and it's really difficult without good knives. The chef with whom I once took a French cooking class with used to say that dull knives are more dangerous than sharp ones, as we tend to use force and end up cutting one or more fingers. I did cut vegetables julienne-style in his class and it was a breeze, using his knives. Unfortunately, my home knives are not as good as his.

Ingredients

    Ingredients

    * 275g/ 10 oz firm tofu
    * 1 tbs olive oil
    * 1 bunch of spring onions, trimmed and sliced
    * 2 small carrots, scraped and cut into matchsticks (julienne style)
    * 1 red pepper, seeded and chopped or sliced
    * 125 g/4 oz mushrooms, wiped and sliced
    * salt
    * freshly ground black pepper

    For the marinade

    * 1 tbs olive oil
    * 1 tbs dry sherry
    * 2 tbs soy sauce
    * 1 garlic clove, crushed
    * 1 tbs grated fresh ginger

Directions

# Drain the tofu and pat dry on paper towels, then slice and place in a shallow dish.
# Mix together all the ingredients for the marinate and pour over the tofu.
# Turn the tofu gently in the marinade to make sure it is all coated, then cover with cling film and leave for at least 1 hour, or overnight.
# Heat the oil in a large sacepan or wok
# Add the vegetables and sir-fry over high heat for 2-3 minutes, until heated through.
# Add the tofu and its marinating liquid and stir-fry for a further 1-2 minutes, until hot.
# Taste and adjust the seasoning and serve at once.
