Number of Servings: 6


    4 cups brown rice (medium grain)

    Olive Oil, 2 tbsp
    Light or Reduced Sodium Soy Sauce, 2 tbsp
    Teriyaki Sauce, 2 tbsp

    Finely chopped carrots, 1 cup
    Chopped onions, 1 cup
    Finely chopped scallions, 1 cup
    Finely chopped green bell pepper, 1 cup
    Frozen (or fresh) peas, 1 cup
    Finely chopped zucchini, 1 cup

    -Optional Ingredients- Not in Calorie Count

    Five spice powder, 1 pinch or tsp
    Ground pepper, 1/2 tsp
    3 eggs (easily seperated with a little oil, then scrambled)
    Yellow squash, 1 cup
    Chopped green beans, 1 cup
    Sweet and Sour sauce, 1 tbsp
    Any sort of meat, shellfish, tofu, etc. you desire


I recommend that you use a rice cooker, but if you don't happen to own one, get that water boiling and cook your rice.

Combine oil, soy sauce, and teriyaki sauce in large wok or frying pan. Any other sauces or seasonings should be added at this point.

Heat the sauce combination at medium-high until hot and some liquid begins reducing.

Add cooked rice.

(If adding egg, cook in separate pan. Medium heat, add 2 tsp olive oil, and 3 eggs, scramble as usual. The oil separates the egg, as found in take-out fried rice.)
(If adding meat, cook separately in a little oil until done.)

Add vegetables

Stir and flip the mixture frequently so everything is coated

Cook until rice is slightly browned and vegetables are tender
