    2 Cup white rice, cooked
    1 Tbsp Sesame oil (or vegetable oil)
    1 Cup chopped onions
    8 oz. frozen salad shrimp, thawed
    10 oz. bag frozen peas & carrots, (thawed under cool water)
    1/2 Cup Egg beaters
    2 Tbsp soy sauce


Precook rice or use leftover rice from another meal.
Heat oil in non-stick frying pan.
Add onions & cook 'til soft.
Add rice & saute.
While rice & onion are cooking, thaw peas, carrots, & shrimp in colander under running water.
Add to rice mixture & heat.
Push mixture to sides of pan & add egg beaters.
When egg is cooked mix all together & sprinkle with soy sauce.
