    1 1/2 cup cottage cheese 1% milkfat
    1 1/2 cup egg substitute (Egg Beaters)
    1 1/5 ounces Chicken Breast shredded
    12 meduim Asparagus spears
    1/2 tsp garlic powder
    1/2 tsp salt


Preheat oven to 350. Grease or spray muffin tin/or use muffin liners. Mix all together. Spoon into muffin tin. Bake for 25. Makes 12. Freeze extras and reheat for quick snack/breakfast.

    This recipe was so tasty! I added green onion to the mix as well, because eggs & green onion are a great combo, but other than that I stayed true and it was delicious! - 12/4/09

  • Taste was great... However, they had too much moisture in them and got kind of "soggy" not bad just unpleasant when you are packing them for the office. - 2/22/10

  • The PERFECT meal for those of us who are not morning people and hate to cook breakfast! Made this morning and they are delicious. Next time I will omit the salt though to lower the sodium. Can't wait to try new veggies with this recipe. Thanks for sharing!!!!!! - 1/7/10
