Number of Servings: 3


    2 teaspoons unsalted butter
    1 teaspoon extra virgin olive oil
    8 ounces mushrooms, sliced
    1 clove garlic, minced
    Pinch dry thyme
    1/8 teaspoon ground nutmeg
    1-1/2 cups beef broth (unsalted)
    1 teaspoon beef base
    1 tablespoon Marsala wine


Heat the butter and oil in a soup pot over low heat and saute the mushrooms without stirring until softened, about 10-15 minutes. Add the garlic and saute, thyme and nutmeg and saute 1 minute. Add the broth and beef, increase heat, bring to a boil, reduce heat to low, cover and simmer 10-15 minutes. Turn off heat and add wine.

Makes three 1/2-cup servings.
