Ingredients

3 Hard Taco Shells
2 TBSP Salsa
1/4 package of Taco Seasoning
1/2 cup Fresh Mushrooms
1 cup Orange Bell Pepperr ( or any color you like )
1/4 block of firm Tofu
Handful of Baby Spinach and Greens Mix
1/4 cup Soy Cheese
1/2 TBSP Extra Virgin Olive Oil
1/4 cup Red Onion
1/4 cup Water
Directions
Heat olive oil in a pan on medium heat.
Chop and slice up the mushrooms, peppers, red onion, and tofu. Throw into pan and cook until tender. Add in the taco seasoning and water and let simmer for 7-8 minutes.
Shred the soy cheese while waiting for sauce to thicken.
Fill taco shells with the mixture adding the salsa, soy cheese, spinach and greens on top.
Serve with vegan sour cream if desired. **this is not included in recipe**
