    1 tbsp butter
    1 tbs olive oil
    1 med onion, coarsely chopped
    1 med tomato, peeled, seeded, and coarsely chopped
    1 small clove garlic
    1/2 dried red hot pepper
    2 pounds (900 grams) butternut or Huggard squash, cut into pieces, seeded, peeled and cut into 1/2 in dice
    4 cups beef stock (or your choice vege stock)
    1 tsp salt
    1/2 tsp sugar
    Parmesan Cheese


n a medium saucepan over medium heat, melt the butter and add olive oil. Stir in the onion, tomato, garlic, and pepper. Cook, stirring occasionally for 10 minutes. Stir in the squash, stock, salt and sugar. Bring to a boil. Lower the heat and simmer, covered for 30 minutes, or until the squash has disintegrated and thickened the soup. Service with Parmesan Cheese.
