    1 1/4 pound lean round steak
    1 medium onion, chopped
    3 cloves garlic, minced
    2/3 cup mixed color pepper strips
    1 lb frozen peas
    4 cups beef broth
    1 1/2 cups jasmine rice, dry
    1 tsp seasoning salt
    1/2 tsp black pepper
    pinch saffron


Cut the round steak into bite sized pieces.
In a large skillet with a tight fitting lid brown the steak with the onions.
Once the onions begin to soften add the garlic, pepper strips, frozen peas, seasoning salt, black pepper, and saffron.
Bring to a boil.
Add the rice.
Return to a boil.
Cover and reduce heat to a simmer.
Cook 15 minutes.
Turn off the heat and let set for 15 minutes longer.
Check that rice is tender.
If the mixture is too soupy for you turn the heat back on and cook uncovered stirring often until you reach the desired consistency.
Makes 6 servings each about 1 1/2 cups.
