    1 tbsp olive oil
    1 tsp Tumeric
    1 medium onion, chopped
    1 shallot, minced
    1 lb of chicken tenderloin, cubed
    10 oz sliced mushrooms
    1 15 oz canned diced tomatoes
    1 tbsp tomato paste
    1 15 oz can chickpeas
    2 tbsp curry powder (or more to taste)
    salt, pepper, garlic powder to taste


Heat the olive oil and tumeric. Add the onion and shallot and brown. Add chicken and brown on all sides. Add mushrooms, sprinkle with curry powder and other spices. Cook for 5 minutes. Add tomatoes, tomato paste and chickpeas. Bring to a simmer. Add potaotes, reduce heat, cover and simmer for 20 minutes or until potatoes are cooked.
