    1/2 large Onion, Chopped
    1 tsp Minced Garlic
    1 T. Ground Ginger
    1 T. Curry Powder
    1/4 tsp ground red pepper, Hot
    3 cans Diced tomatoes
    4 cups cooked diced potatoes
    1 lb cubed form tofu
    2 t. salt.


Saute onions and garlic in oil until transparent stir in spices, add cooked potatoes, canned tomatoes, cubed tofu and salt. Let simmer together for 30 minutes or so to combine flavors. Serve with Rice Curry and bread.
