    1/4 c. Vegetable oil
    1/2 large onion, Chopped
    1 tsp minced garlic
    1T Curry Powder
    1T Ginger Powder
    Pinch of Cayenne pepper
    2 c. brown rice
    3 c. frozen mixed vegetables
    5 c. water
    2 tsp salt


Saute Onion and garlic in oil till onions are transparent. Stir in spices. Add water, rice, vegetables and salt. Cook until water is absorbed and rice is tender. Serve with Tofu Curry. Makes about 12 cups.
