    2 lbs of ground Chicken
    1 tsp EVOO
    1 medium Onion
    1 can of kidney beans
    1 can tomato sauce
    1 can of diced tomatos
    1/3 yellow pepper
    1/3 green pepper
    1 cup mushrooms - rough chopped
    3 tablespoon of Chili powder
    what ever spices are available that you like


Sweat the onions in the EVOO, after a couple of minutes add the ground chicken and 1/2 the spices and cook til done.
In a pot put the kidney beans, tomato sauce, diced tomatos and stir and warm up.
Once chicken mixture is done add to tomato mixture and increase heat to med-low and add veggies.
Cook for 2 to 3 hours (or longer if you like) then taste and add spices if required.
I use NO salt and use UNSALTED items where I can.
