Ingredients

2 strips Morningstar Farms veggie bacon
1 onion, chopped
1/2 green pepper, chopped
1 stalk celery, chopped
1 clove garlic
1 (16 oz) can diced tomatoes
1 bay leaf
1/2 tsp ground black pepper
1 tsp Annies vegetarian worcestershire sauce
2 drops liquid smoke
1 tsp hot pepper sauce
1 lb frozen cooked shrimp, thawed
1 tbsp canola oil
Directions
Cook bacon in 1 tablespoon canola oil in a large skillet over medium heat until crisp. Drain on paper towels and crumble when cool.
Heat the remaining 1 tablespoon oil in the skillet, and cook the onion, bell pepper and celery for 5 minutes, or until tender. Stir in garlic and cook for 1 minute. Add tomatoes (and their juice), bay leaf, black pepper, Worcestershire sauce, liquid smoke, and hot pepper sauce and heat to boiling. Reduce heat to low and simmer for 20 minutes. Add shrimp and bacon and cook for 10 minutes, or until heated through. Remove and discard bay leaf before serving.
