Ingredients

    500 gm Ground Pork (mince)
    1 cup grated carrot
    1 tin water chestnuts drained (sliced & diced)
    2 large cloves garlic (chopped finely)
    100 gm Spring onions (chopped) separate green from white
    1 cup bamboo shoots
    3 tbsp oyster sauce
    3 tbsp kecap manis
    Splash sesame oil
    1 tbsp peanut oil (cooking)
    8 iceberg lettuce leaves (cups) washed & drained
    seasoning

Directions

Prepare iceberg lettuce leaves - pull apart, wash and leave to one side. Chop spring onions keep white part separate from green part. Heat peanut oil in pan & cook chopped spring onion (white stalks only) for a few minutes. Add pork mince and brown. Add carrot, chestnuts, oyster sauce, kecap manis & splash of sesame oil. Stir & simmer until sauce thickens to a syrupy consistency. Lastly add green chopped spring onion & bamboo shoots. Spoon into lettuce cups and wrap. Serve immediately. Season to taste.

    Kecap manis is also known as Indonesian Soy Sauce. It is thicker, more syrupy and sweeter than normal soy sauce.
