    1 tbsp olive oil
    2 cloves garlic, minced
    .5 tbsp oregano, dried
    1 tsp salt
    .25 tsp cayenne
    .25 tsp allspice
    1.5 # pork tenderloin, 1.5" cubes
    1.5 green plantains, peeled, cut into .75" rounds
    2 cups low sodium beef broth
    1 cup onion, chopped
    1 medium green bell pepper, chopped
    1 tbsp cider vinegar
    3 2"x5" sweet potatoes
    Cilantro to garnish


Mix the first 6 ingredients together. Add the pork and toss to coat.
Sear the pork on medium-high heat. 5-10 minutes.
Add the plantains, broth, onion, bell pepper and vinegar. Simmer for 20 minutes.
Add the sweet potatoes and simmer for another 30 to 40 minutes, until the potatoes are tender.
Garnish with cilantro.

Makes 7 and 1/3 servings at 1.5 cups each.
