I used Pam spray to coat the pan, wilted the spinach slightly. I used Pam spray to coat the pan, wilted the spinach slightly.

    1 SMALL egg white
    4 large Spinach leaves
    1 1/2 TBS sliced Black Olives
    1 medium Scallions chopped
    4 cherry tomatoes, quartered
    1 1/2 TBS shredded Cheddar Cheese
    2 TBS Feta Cheese cubed
    1 TBS shredded Mozzarella Cheese
    spray for cooking


Chop vegetables and shred cheese, set aside

Spray small skillet with Pam or other cooking spray, add spinach leaves and 1 tomato. Cook gently until spinach is partially wilted then remove from pan.

Beat eggs and place in skillet and let cook until almost done, add vegetables and fold egg over. Cook until combined, flip over, top with feta and heat.

Serve hot. Top with pepper if desired.
