Number of Servings: 4


    2 small, skinless, boneless chicken breasts
    1 onion, chopped
    1/2 cup peas, frozen
    1 cup water
    1 (10 3/4 oz.) can condensed cream of chicken soup, low fat
    1 cup frozen corn
    1/2 cup milk, nonfat
    1/2 cup shredded cheddar cheese
    2 Tbsp. pimentos


In medium saucepan, combine chicken, onion, peas and water. Bring to boiling, reduce heat. Simmer covered 15-20 minutes or until no longer pink. Remove chicken, but reserve liquid. When cool enough to handle, chop chicken, then return to mixture in saucepan. Stir in soup, corn, milk, cheese, and pimento. Bring just to boiling, stirring until cheese is melted.
