Number of Servings: 20


    1 lb nuts (almonds, pecans, walnuts)
    1 egg white
    1 Tsp water
    1/3 c dark brown sugar
    2/3 c granulated sugar
    1 tsp kosher salt
    1 tsp cinnamon
    1/4 tsp cayenne pepper


Preheat oven to 300F.
Line a jellyroll pan with parchment paper. Set aside.
Whisk egg white and water until frothy.
Mix brown sugar, granulated sugar, salt, cinnamon, and cayenne in a small bowl.
Place nuts in a large bowl.
Pour egg white over nuts and mix to coat thoroughly
Add sugar mixture and mix to coat evenly and thoroughly.
Spread nuts in the pan.
Bake at 300F for 30 minutes.
Turn and mix nuts up.
Bake another 15 minutes.
Turn and mix. Bake another 15 minutes.
Remove from oven and cool.
Store in airtight container. Makes approx 5 cups.
