I got this out of a Rachel Ray cook book the family absolutely loves it. I got this out of a Rachel Ray cook book the family absolutely loves it.

    Butter, unsalted, 2 tbsp
    *Extra Virgin Olive Oil, 2 tbsp
    Onions, raw, 1 medium (2-1/2" dia) - chopped
    Celery, raw, 2 stalk, large (11"-12" long) chopped
    *Potato, raw, 1 large (3" to 4-1/4" dia.)chopped
    Cod (fish), 16 oz
    Haddock (fish), 16 oz
    Milk, 2%, 3 cups
    Chicken Broth, 3 cup (8 fl oz)
    *Flour, white, .1875 cup
    Pepper, red or cayenne, .25 tsp
    Bay Leaf, 1 tbsp, crumbled
    Shrimp, raw, 16 oz


in soup pot -melt butter and oil on medium heat
add potato, onion and celery as you chop them cook about 5 minutes - add flour cook 1 minute
add sherry cook 1 minute
add stock - bring to a bubble
add fish cook about 5 minutes until fish is cooked and shrimp is pink
add milk and cayenne pepper
bring up to heat (not a boil)

    Yummy! The calories are a little off because the sherry isn't listed in the ingredients. I used frozen fish and shrimp. It was loved by the whole family! - 6/17/10
