Number of Servings: 12


    1 cup warm water
    3 tsp. yeast
    3 tsp. sugar
    1.5 tsp. salt
    2 TBS. olive oil
    3 1/4 cups flour


Combine warm water and yeast in large bowl. When dissolved, add the sugar, salt, oil and 1 cup flour. Beat until smooth. Then add up to 2 1/4 cups more flour, or enough to make a stiff dough. Knead until elastic, about five minutes. Place in greased bowl and let rise until double, about 45 minutes. Work dough into a french loaf shape and place on cookie sheet. Let rice 10 minutes. Then bake @400 degrees for about 15 minutes. Slice into 12 pieces.

    I added a quarter cup of parmesan cheese and broke the dough into 9 small fistfull size balls. I flattened them quickly (without kneading them more) in order to keep as much air in the dough as you can. Bake at 500 for one minute on bottom rack then move to top rack for 5-6 min till brown. YUM - 10/14/10
